Doterra Cassia essential oil is steam distilled from the bark of the Cinnamomum Cassia plant and is closely related to Cinnamon (Cinnamon Bark). Cassia has been used for over centuries and is even mentioned in the Old Testament for its very recognizable scent and special properties. The Cassia tree is an evergreen tree, meaning it has leaves all year round and is therefore always green. The tree is originally from China (hence the name Chinese cinnamon) but also occurs in other countries in South and East Asia (India, Indonesia, Laos, Malaysia, Taiwan, Thailand and Vietnam). The flower buds are also used as a spice, especially in India, and were once used by the Romans. The Cassia tree can grow up to 10 to 15 meters tall and in China Rougui tea is also made from it, which is ultimately processed into the well-known Oolong tea. The oil is also very widely used in baking pies, cakes and cookies. If you want to use Doterra Cassia essential oil for baking you really only need about 1 drop, essential oil is very concentrated! Cassia is a bit sweeter and more burning than Cinnamon Bark (Cinnamon) and Cinnamon is a bit softer and less bitter in taste. It seems that you can replace the Cassia with Cinnamon but that the other way around is not always advisable. The real cinnamon is the Cinnamon Bark / Ceylon Cinnamon / Cinnamomum Zeylanicum / Cinnamomum Verum and this variant is the Chinese Cinnamon or the Cassia Cinnamon. You recognize the Cassia by the dark brown / red rolls (pipes) and they are somewhat rougher than the Cinnamon Bark / Ceylon Cinnamon.
